Makes 2 servings
3 oz. basmati rice
3 oz. Nu-World Foods Puffed amaranth
1 ½ oz. watercress, chopped
1 ½ red peppers, diced
2 tbsp. safflower oil
1 tsp. minced onion
½ tsp. salt
juice of 1 lemon
½ cup Nu-World Amaranth Snackers- garden
burst or French onion crushed
Combine all ingredients. Toss and serve.
