Makes 2 servings
3 oz. black-eyed peas, cooked (chilled)
3 oz. couscous, cooked (chilled) or 3 oz Nu-World
Foods Puffed Amaranth
3 oz. celery, chopped
3 oz. carrot, chopped
1½ oz. pecans, chopped
1½ tsp. chopped fresh parsley
½ tsp. marjoram
1½ tsp. basil
½ cup Nu-World Amaranth Snackers-chili
lime
Combine all ingredients. Mix well. Place approximately
¼ of mixture in a blender with 2 oz. water.
Blend until completely pureed. Return to the rest
of the mixture and mix well.
